Menu Plan Monday - Week of February 25th

Comments on last weeks menu , we ended up not getting to several days of it, but we did have:

  • Cheesy Chops & Potatoes - a family favorite

  • Meatloaf - Emma liked it, Brett didn't care for it - and I thought it turned out well. I like making it in a bath of water and having the fat wicked away. Next time I would add some more seasoning to it - as it was a bit bland.

  • Crock Pot Pizza - again Emma liked it, Brett not so much. I really liked it - although I would probably 1/2 the recipe next time and add more pizza sauce to it.


Monday - Leftovers - we still have meatloaf and CrockPot Pizza to finish

Tuesday - Family day & it is Braeden's choice so it will be Macaroni & Cheese with Tuna Fish

Menu Plan Monday

Okay, so it's Tuesday - I was busy on Monday LOL (and Jen requested recipes - so I edited this to add the recipes.

Our menu for the week:

Tuesday - Chops and Cheesy Potatoes from the Where's Mom Now That I Need Her? Cookbook which I think is a must have for any family - especially young people starting out - I give it to my family members at their High School Graduation!!

1 can potatoes, cut in pieces or 2-3 cooked potatoes

1 T. onion minced

1 can cream of mushroom soup

1 can cheddar chese soup

4 pork chops

Combine potatoes, onion, mushroom soup, and cheese soup. Arrange pork chops in greased baking dish; top with potatoes. Bake at 350 for 1 hour.

Wednesday - Meat Loaf

Thursday - Turkey Chili

Chicken Turnovers

Crust:
3 sticks (1 1/2 cup) butter
3 cups flour
8-9 oz. cream cheese
~Mix these together. Chill. Roll thin and cut into rounds.
Filling:
2 cups cooked chicken chunks
1 can cream of chicken soup or cream of mushroom soup
1/2 cup chopped celery
1/4 cup finely chopped onions
~Mix ingredients. Put filling on each round. Top with another round and press together with a fork. Pril top of pastry with fork. Bake at 400 for 15 minutes. Serve hot with chicken gravy. Makes 16 tarts.

Saturday - Football Casserole - from this site

Football Casserole

Ingredients:
1-2 pounds Ground Beef
1-2 jars/cans of Cheese soup or Cheese Whiz
1 bag Frozen French Fries
Salt and Pepper to Taste


Directions:
Brown beef and drain. Put 1/3 of French fries in bottom of casserole pan. Place 1/3 of hamburger, then 1/3 of cheese, salt and pepper. Repeat layers until finished.

Heat oven to 350 degrees and cook for about 20 to 35 minutes.


Serve with a salad. Use lean ground beef for low fat.

Prep time: 15 to 20 mins.

Serves 6- 8 people

Sunday - Crock Pot Pizza - from this site

Crock pot Pizza

One bag of wide egg noodles
1 lb hamburger
2 cans pizza sauce
16 oz mozzarella cheese
1 can cream of mushroom soup
Pizza ingredients (olives, Mushrooms, pepperoni whatever you like)


Cook the egg noodles according to the package. Brown the hamburger. Then you layer the all then ingredients in the crock pot and top with a little cheese. Cook on low for 3 to 4 hours or until heated through.

To make clean up a little easier I also lightly coat my crock pot with oil. - New Hampshire
